Butyric acid opens with an assault of rancid butter—the unmistakable smell of dairy gone wrong. This isn't subtle; at full strength, it's genuinely offensive with its penetrating, persistent character that combines the worst aspects of spoiled butter with sharp, aged cheese. The sour-acidic quality cuts through everything, while animalic undertones add to its challenging profile. Yet this very unpleasantness is precisely what makes it valuable—at extreme dilution (below 0.01%), it provides the authentic sharp tang that transforms simple creamy notes into realistic aged dairy effects. Detected by humans at just 10 ppm, its power is undeniable.
Deploy butyric acid with extreme caution—typically at 0.001-0.01% maximum in finished products. Its exceptional persistence means mistakes linger, requiring careful pre-dilution to 0.1% or less before use. In dairy compositions, minute traces add the sharp edge that distinguishes fresh cream from aged cheese. Use it to enhance butter accords with realistic fermented depth or to add authenticity to milk and cream bases. The material's greatest value lies in its esters—ethyl butyrate (pineapple), butyl butyrate (tropical fruit), and isoamyl butyrate (pear) provide pleasant fruity notes that completely transform the parent acid's objectionable character.
Despite sharing the same four-carbon chain, butyric acid differs dramatically from its isomer isobutyric acid in both structure and scent. Butyric acid's straight chain creates the classic rancid butter-cheese profile essential for authentic dairy effects; isobutyric acid's branched structure produces a milder, less penetrating character often described as more "sweaty" than cheesy. Both acids work synergistically in complex dairy reconstructions, with butyric providing sharp cheese notes and isobutyric adding depth without overwhelming pungency. In ester form, butyric esters tend toward tropical fruits while isobutyric esters lean more toward berry notes. Choose butyric acid for authentic aged cheese effects and when you need maximum dairy impact; select isobutyric acid for subtler fermented nuances and better blending in delicate compositions.
Because of its repulsive nature, we sell this at 1% in DPG but for those who are working in very large amounts, we also offer it pure.

Like most suppliers and makers of quality raw materials for fragrances, we do not filter many of our products. This ensures that no odiferous matter is lost prior to use but can result in the appearance of small particles or slight clouding.
All alcoholic fragrances should be macerated for up to a month and then chilled in a moderate freezer overnight before being filtered fine. This will remove all cloudiness or detritus and is the industry norm.
