    Parmentier Pyrazine opens with unmistakable roasted character—nutty, coffee-like, and immediately evocative of foods transformed by heat. The burnt woody facets add complexity, while earthy potato notes provide the distinctive quality that earned this material its name (after Antoine-Augustin Parmentier, the French agronomist who championed the potato). Toasted cocoa and savoury broth undertones complete a profile that smells genuinely edible.

    Work with Parmentier Pyrazine at high dilution—evaluate at 0.1% or less to appreciate its nuances without overwhelming your nose. Use it alongside other pyrazines like Grenoble, Praslin, and Torref to build complex roasted accords. The earthy-potato facet distinguishes it from purely nutty pyrazines, making it valuable in compositions where root vegetable warmth or cooked-food authenticity is desired. Excellent in gourmand, tobacco, and leather contexts.

    This pyrazine is named after Antoine-Augustin Parmentier (1737–1813) who convinced the French to add potatoes to their diet by various clever marketing tricks such as having King Louis XVI wear potato flowers in his buttonhole.

    Some Clever Uses

    The Synthetic Oudh Base

    Real Oudh oil has a "rot" and "fermented" quality that is very hard to fake. A trace of Parmentier Pyrazine combined with Castoreum and Cypriol creates an incredibly realistic "barnyard" Oudh effect. The earthy/potato note mimics the rotting wood of the Agar tree perfectly.

    The "Dark" Chocolate

    Most chocolate accords smell like cheap Easter eggs (too much Vanillin and Isobutavan). Parmentier Pyrazine adds the bitterness. It mimics the smell of the cocoa nib roasting in the drum. It turns a "Milk Chocolate" accord into "70% Dark Chocolate". And of course a touch of civet absolute takes the blend in a ganache direction.

    The Coffee Illusion

    If you are making a coffee base, Torref Pyrazine gives you the smell of the dry beans. Parmentier gives you the smell of the hot liquid espresso. It provides the "wet grounds" note that is missing from most coffee perfumes.

    Parmentier Pyrazine vs the Dimethylpyrazines

    While Grenoble (2,3-dimethyl), Praslin (2,5-dimethyl), and Torref (2,6-dimethyl) pyrazines each emphasise different aspects of roasted character—nut-skins, praline, and dark coffee respectively—Parmentier Pyrazine adds an extra dimension with its earthy potato and broth-like facets. It has a rounder, more complex profile than the simpler dimethyl isomers. Use Parmentier when you want roasted depth with distinctive earthy-savoury warmth; combine it with the dimethylpyrazines for layered, realistic gourmand effects.

    General Information

    Like most suppliers and makers of quality raw materials for fragrances, we do not filter many of our products. This ensures that no odiferous matter is lost prior to use but can result in the appearance of small particles or slight clouding.

    All alcoholic fragrances should be macerated for up to a month and then chilled in a moderate freezer overnight before being filtered fine. This will remove all cloudiness or detritus and is the industry norm.
